Je me suis souvenue que la fili\u00e8re viande communiquait beaucoup sur l\u2019agneau et proposait des recettes de Chefs et de bloggeuses: l\u2019agneau en ap\u00e9ro, en repas vite fait bien fait et m\u00eame en version gastro. En effet, <a class=\"popup\" href=\"http:\/\/www.agneaupresto.com\/\">le site Agneau Presto <\/a>est toujours en ligne, merci Interbev !<\/p>\n<p>D\u2019apr\u00e8s leur recette de <strong>mini r\u00f4ti au pesto, ma version du r\u00f4ti de selle d\u2019agneau au pesto sans parmesan<\/strong>, tout autant vite fait que bon :<\/p>\n<p>&#8211; 500 g de selle d\u2019agneau<br \/>\n&#8211; 2 gousses d\u2019ail<br \/>\n&#8211; 30 g de pignons de pin<br \/>\n&#8211; 50 g de basilic surgel\u00e9<br \/>\n&#8211; 1 cuill\u00e8re \u00e0 caf\u00e9 de sel<br \/>\n&#8211; 50 g d\u2019huile d\u2019olive<\/p>\n<\/div>\n<\/div>\n<div class=\"ob-section ob-section-text\" style=\"text-align: justify;\">\n<div class=\"ob-text\">\n<p><a class=\"ob-link-img\" href=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_6e3b73_25-coteficelles1.jpg\" target=\"_blank\" rel=\"noopener\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" alt=\"\" src=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_6e3b73_25-coteficelles1.jpg\" width=\"300\" height=\"300\" \/><\/a><\/p>\n<p>Mixer les pignons, les gousses d\u2019ail et le basilic avec 50 g d\u2019huile d\u2019olive. Saler et r\u00e9server dans un pot.<\/p>\n<p>Ouvrir la selle d\u2019agneau (d\u00e9soss\u00e9e) et badigeonner g\u00e9n\u00e9reusement de pesto. Refermer et ficeler. Je ne suis pas fan de ficeler un r\u00f4ti comme un boudin. Je pr\u00e9f\u00e8re la marguerite (ou la fleur), c\u2019est joli, pratique et comme le r\u00f4ti est \u201cplat\u201d, il dore et cuit plus facilement. (cf l&rsquo;exemple ci-contre avec une c\u00f4te de boeuf ficel\u00e9 en fleur)<\/p>\n<p>Faire dorer \u00e0 feu vif dans une po\u00eale avec un fond d\u2019huile d\u2019olive. Puis cuire au four \u00e0 200\u00b0C pendant 20 \u00e0 30 min.<\/p>\n<p>En accompagnement, <strong>frites (\u00e9videmment !) et po\u00eal\u00e9e de cardes &#8211; carottes<\/strong>. J\u2019ai fait pr\u00e9cuire les carottes et les cardes (c\u00f4tes de blette) \u00e0 l\u2019eau, puis je les ai po\u00eal\u00e9 directement dans la po\u00eale de la viande. Un soup\u00e7on de poivre blanc et on passe \u00e0 table.<\/p>\n<\/div>\n<\/div>\n<div class=\"ob-section ob-section-text\" style=\"text-align: justify;\">\n<div class=\"ob-text\">\n<p><em>We were agog about some lamb, red wine and french fries. I remembered that the French meat industry communicated a lot about lamb meat and offered recipes of Chefs and bloggers : lamb for aperitif time, as fast and well done, and even gastronomic version. Indeed, the <a class=\"popup\" href=\"http:\/\/www.agneaupresto.com\/\">website Agneau Presto<\/a> is still online, thanks to Interbev !<\/em><\/p>\n<p><em>From their <strong>mini roast with pesto recipe, my version of lamb saddle, roasted with pesto without parmesan<\/strong>, just as quickly as good<\/em><\/p>\n<p><em>&#8211; 500 g of saddle of lamb<\/em><br \/>\n<em> &#8211; 2 cloves of garlic<\/em><br \/>\n<em> &#8211; 30 g of pine nuts<\/em><br \/>\n<em> &#8211; 50 g of frozen basil<\/em><br \/>\n<em> &#8211; 1 teaspoon of salt<\/em><br \/>\n<em> &#8211; 50 g of olive oil<\/em><\/p>\n<p><em>Mix pine nuts, garlic and basil with olive oil. Salt and set aside in a pot.<\/em><\/p>\n<p><em>Open the saddle of lamb (boneless) and brush generously with pesto. Close and tie. I &lsquo;m not a fan of tying a roast like a big sausage. I prefer the daisy (or flower), it&rsquo;s pretty , practical and as the roast is \u00ab\u00a0flat\u00a0\u00bb, it roasted and cooked more easily.<\/em><\/p>\n<p><em>Saut\u00e9 over high heat in a frying pan with olive oil. Then bake at 200 \u00b0 C for 20-30 min.<\/em><\/p>\n<p><em>In accompanying: french fries (of course!) and saut\u00e9ed chard &#8211; carrots. I did precooked carrots and chard (chard ribs) with water, then I seared directly into the pan of meat.
