Brett Jackson, le winemaker de la <strong>Vina Valdivieso<\/strong>, a mis au point ce grand vin gr\u00e2ce aux nombreux domaines que poss\u00e8de la maison Valdivieso. En effet, cette derni\u00e8re poss\u00e8de des terres du nord au sud du Chili. Ainsi, Brett choisit chaque ann\u00e9e d\u2019assembler les meilleurs vins pour en faire <strong>un nouveau num\u00e9ro (ou pas)<\/strong>. Puis il garde une partie de ce vin pour l\u2019assembler avec le vin au num\u00e9ro suivant. Vous me suivez ?<\/p>\n<p>Par exemple, dans le Caballo Loco n\u00b0 13, il y a presque 50% du vin issu du Cabollo Loco n\u00b012. Dans le n\u00b012, il y a presque 50% du n\u00b011, dans le num\u00e9ro 11, il y a du n\u00b010&#8230; Plus le num\u00e9ro du Caballo Loco est \u00e9lev\u00e9, plus il est int\u00e9ressant.<\/p>\n<p>Mais un num\u00e9ro ne correspond pas \u00e0 un mill\u00e9sime. D\u2019abord parce que l\u00e9galement ce n\u2019est pas possible avec du vin issu des vendanges pr\u00e9c\u00e9dentes. Et puis parce que selon la qualit\u00e9 des vendanges, il n\u2019y a pas un nouveau num\u00e9ro chaque ann\u00e9e.<\/p>\n<p>Bref, tout cela pour dire que ce vin est d\u2019une <strong>complexit\u00e9 aromatique d\u00e9tonante<\/strong> ! D\u00e8s l\u2019ouverture, c\u2019est de la poudre de fusil qui nous saute au nez, puis doucement viennent les \u00e9pices chaudes comme le poivre et le musc, la fra\u00eecheur du r\u00e9glisse, le bouquet suave de roses. Et c\u2019est <strong>magnifiquement changeant<\/strong> jusque 4 heures apr\u00e8s l\u2019ouverture.<\/p>\n<p>En bouche, c\u2019est tout aussi complexe. Je ne retiendrais que <strong>la cerise noir et les fruits m\u00fbrs<\/strong>, un fond de poivron et <strong>la douceur du tanin<\/strong> qui finit longuement sur une note de confiture de datte. Le tout avec un go\u00fbt de vin bien s\u00fbr.<\/p>\n<p>Pour d\u00e9guster un tel vin, je suis retourn\u00e9e chez <a class=\"popup\" href=\"http:\/\/peggysilkroad.overblog.com\/degustation-loupiac-chateau-de-rouquette-chez-noble-house-shanghai\"><strong>Noble House<\/strong> (restaurant install\u00e9 dans un manoir espagnol de Shanghai)<\/a>. Brett Jackson, the winemaker for<strong> Vina Valdivieso<\/strong>, has developed this great wine thanks to the many vineyards that Valdivieso has. Indeed, it owns lands from north and south of Chile. Thus, Brett chooses each year to assemble the best wines<strong> to make a new number<\/strong> (or not). Then he keeps part of this wine to assemble with the next number wine. Following ?<\/em><\/p>\n<p><em>For example, in the Caballo Loco number 13, there is almost 50% of the wine from Cabollo Loco number 12. In No. 12, there is almost 50% of No. 11, in No. 11, there is No. 10 &#8230; Higher is the Caballo Loco&rsquo;s number, more the wine is interesting.<\/em><\/p>\n<p><em>But number does <strong>not match with a vintage<\/strong>. First, because legally it is not possible with the wine assembled with previous vintages. And because according to the quality of the harvest, there is not a new issue every year.<\/em><\/p>\n<p><em>Anyway, this wine is<strong> an explosive aromatic complexity<\/strong>! Upon opening, this is the gunpowder that jump in the nose, then gently come <strong>hot spices<\/strong> like pepper and musk, the <strong>freshness<\/strong> of licorice, <strong>sweet bouquet<\/strong> of roses. And it is beautifully changing up to 4 hours after opening.<\/em><\/p>\n<p><em>In the mouth, it is equally complex. I would remind the <strong>black cherry and ripe fruits<\/strong>, a background of <strong>pepper<\/strong> and the <strong>sweetness of tannin <\/strong>which eventually hold a note of datte jam. With a wine taste of course.<\/em><\/p>\n<p><em>To taste this wine, I went back to<strong> <\/strong><a class=\"popup\" href=\"http:\/\/peggysilkroad.overblog.com\/degustation-loupiac-chateau-de-rouquette-chez-noble-house-shanghai\">Noble House (restaurant in a Spanish mansion in Shanghai)<\/a>.
