{"id":394,"date":"2012-09-02T15:08:43","date_gmt":"2012-09-02T13:08:43","guid":{"rendered":"http:\/\/silkroad-conseil.com\/blog\/2012\/09\/neversland\/"},"modified":"2023-02-18T18:03:19","modified_gmt":"2023-02-18T17:03:19","slug":"neversland","status":"publish","type":"post","link":"https:\/\/www.silkroad-conseil.com\/wordpress\/neversland\/","title":{"rendered":"Neversland"},"content":{"rendered":"<div class=\"ob-section ob-section-text\">\n<div class=\"ob-text\">\n<p>La premi\u00e8re fois que je suis partie \u00e0 <strong>Nevers en Bourgogne<\/strong>, on m&#039;avait mis en garde contre certaines &quot;l\u00e9gendezurbaines&quot; : petite cabane au fond du jardin, restriction de l&#039;\u00e9lectricit\u00e9 \u00e0 partir de 20h, des vaches et encore des vaches, bien plus qu&#039;\u00e2mes qui vivent, et que <strong>&quot;\u00e0 N&#039;vers, y&#039;a p\u00f4 grand chose \u00e0 faire, alors on bw\u00f4o&quot;<\/strong> !<\/p>\n<p>Mais finalement, on ne s&#039;y ennuie pas car la flore, et surtout la faune de N&#039;vers est tout aussi incroyable que la parole d&#039;un Neversois : des tortues de mer, des routes de r\u00eave (<strong>circuit de Nevers-Magny-Cours<\/strong>, au pied du Morvan) envahis par 400 lapins (soit 20 rang\u00e9s de 20, ou encore 800 oreilles&#8230;), des monstres marins en putr\u00e9faction recrach\u00e9s par les <strong>tumultes mortelles de la Loire<\/strong>, des gros lapins de 120 kg qui font des sauts de biches, ou encore des rats qui font des bonds d&#039;1m80&#8230; Beaucoup de surprises m&#039;attendaient \u00e0 Nevers, alors que je n&#039;\u00e9tais arm\u00e9e que de mon Laguiole et d&#039;une Maglight.<\/p>\n<\/p><\/div>\n<\/div>\n<div class=\"ob-section ob-section-images ob-default\">\n<div class=\"ob-row-1-col\"><a href=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_1aaf84_nevers-vue-depuis-la-rive-sud-de-la-loire.jpg\" class=\"ob-link-img\"><img decoding=\"async\" src=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_1aaf84_nevers-vue-depuis-la-rive-sud-de-la-loire.jpg\" alt=\"Nevers&#x20;-&#x20;Photo&#x20;de&#x20;Lo&#x00EF;c&#x20;Corbasson&#x20;&#x28;Wikip&#x00E9;dia&#x29;\" class=\"ob-cell ob-img ob-media\" \/><\/a><\/div>\n<p class=\"ob-desc\">Nevers &#8211; Photo de Lo\u00efc Corbasson (Wikip\u00e9dia)<\/p>\n<\/div>\n<div class=\"ob-section ob-section-text\">\n    <a href=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_30f91c6221a1a4a3937ce7fd421504b1_cremeux-petits-pois1.jpg\" class=\"ob-link-img\" target=\"_blank\" rel=\"noopener\"><br \/>\n        <img decoding=\"async\" src=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_30f91c6221a1a4a3937ce7fd421504b1_cremeux-petits-pois1.jpg\"\n             class=\"ob-media ob-img ob-pull-left ob-media-left\" alt=\"Neversland\" \/><br \/>\n    <\/a><\/p>\n<div class=\"ob-text\">\n<p>L&#039;une des plus belles et qui me ravie toujours aujourd&#039;hui, c&#039;est un d\u00eener chez Marie-H\u00e9l\u00e8ne et Jean-Michel Couron. Je me suis un jour laiss\u00e9e tenter par leur restaurant \u00e9toil\u00e9e au Guide Michelin : carte sobre, menu attractif, fromages et vins &quot;du pays&quot;.<\/p>\n<p>C&#039;\u00e9tait il y a 8 ans, et je me souviens encore de cette salade de shiitak\u00e9s (<strong>&quot;il para\u00eet qu&#039;elles poussent dans les caves des fermes tenues par des chinois ! J&#039;ai une amie qui allait leur porter \u00e0 manger tous les jours dans les sous-sols sombres et humides&#8230;&quot;<\/strong>).<\/p>\n<p>Et ce double chariot de fromages de ch\u00e8vre, de diff\u00e9rents affinages et de toutes les formes possibles et imaginables. Et cette bo\u00eete magique de pan masala en fin de repas !<\/p>\n<p>Bref, bienvenue chez <a href=\"http:\/\/www.jm-couron.com\"><strong>JM Couron le petit restaurant \u00e9toil\u00e9 de N&#039;vers<\/a><\/strong>.<br \/>\n (Photo de ma Claire)<\/p>\n<\/p><\/div>\n<\/div>\n<div class=\"ob-section ob-section-text\">\n<div class=\"ob-text\">\n<p>Parmi les diff\u00e9rents amuse-bouches offerts, il y avait un <strong>cr\u00e9meux de petits pois<\/strong> : simple mais efficace, j&#039;adore !<\/p>\n<p>En entr\u00e9e, ma Claire a pris <strong>La barre de gel\u00e9e de ratatouille aux \u00e9crevisses, encre de seiche et basilic en condiment<\/strong>, et moi <strong>Les lamelles de pintade au tandoori, rouleau de champignons shiitakes et noisettes torr\u00e9fi\u00e9es, p\u00e2te de noisettes<\/strong> (oui, des shiitak\u00e9s neversois !).<\/p>\n<p>Puis, nous avons choisi <strong>Le merlu grill\u00e9 sur peau avec une sauce au lait de coco et des poivrons<\/strong>.<\/p>\n<p>Et en dessert, dur dilemme entre l&#039;accord thym\/p\u00eache et verveine\/abricot. Du coup, on a pris les deux : <strong>Le sabl\u00e9 breton au thym et quartiers de p\u00eache relev\u00e9s de piment d\u2019Espelette, caramel beurr\u00e9 au th\u00e9 vert<\/strong> et <strong>Sur un craquant au sarrasin, une mousse de fromage blanc \u00e0 la verveine bio, abricots r\u00f4tis au sucre roux et granit\u00e9 de verveine.<\/strong><\/p>\n<\/p><\/div>\n<\/div>\n<div class=\"ob-section ob-section-images ob-default\">\n<div class=\"ob-row-1-col\"><a href=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_9e0929_menu-couron-photosclaire-1.jpg\" class=\"ob-link-img\"><img decoding=\"async\" src=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_9e0929_menu-couron-photosclaire-1.jpg\" alt=\"Photo&#x20;de&#x20;ma&#x20;Claire,&#x20;bien&#x20;plus&#x20;dou&#x00E9;e&#x20;que&#x20;moi&#x20;&#x21;\" class=\"ob-cell ob-img ob-media\" \/><\/a><\/div>\n<p class=\"ob-desc\">Photo de ma Claire, bien plus dou\u00e9e que moi !<\/p>\n<\/div>\n<div class=\"ob-section ob-section-text\">\n<div class=\"ob-text\">\n<p>Et que serait un bon repas bourguignon sans un nectar digne de ce nom ? Je devais laisser mon experte es vins choisir, mais vue combien elle \u00e9tait en transe devant la carte, j&#039;ai quand m\u00eame donn\u00e9 mon avis \ud83d\ude09 Nous avons tent\u00e9 une appellation inconnue au bataillon : l&#039;<strong>Auxey-Duresse<\/strong>, petit AOC communale du village du m\u00eame nom, situ\u00e9 en c\u00f4te de Beaune.<\/p>\n<\/p><\/div>\n<\/div>\n<div class=\"ob-section ob-section-images ob-default\">\n<div class=\"ob-row-1-col\"><a href=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_71bc139d6087b34125ff6fe6ea8241eb_auxey-duresses-1.jpg\" class=\"ob-link-img\"><img decoding=\"async\" src=\"http:\/\/192-168-1-24.yoan-sageloly.direct.quickconnect.to\/wordpress\/wp-content\/uploads\/2014\/03\/ob_71bc139d6087b34125ff6fe6ea8241eb_auxey-duresses-1.jpg\" alt=\"C&#x27;est&#x20;un&#x20;vin&#x20;blanc,&#x20;juste&#x20;d&#x00E9;licieux&#x20;&#x21;&#x20;Il&#x20;est&#x20;fin,&#x20;bien&#x20;balanc&#x00E9;,&#x20;plut&#x00F4;t&#x20;acidul&#x00E9;&#x20;et&#x20;tr&#x00E8;s&#x20;fruit&#x00E9;.&#x20;Il&#x20;a&#x20;&#x00E9;t&#x00E9;&#x20;parfait&#x20;sur&#x20;le&#x20;poisson,&#x20;les&#x20;fromages&#x20;de&#x20;ch&#x00E8;vres,&#x20;la&#x20;fourme&#x20;&#x28;mon&#x20;p&#x00E9;ch&#x00E9;&#x20;mignon&#x29;&#x20;et&#x20;les&#x20;desserts&#x20;aux&#x20;fruits.\" class=\"ob-cell ob-img ob-media\" \/><\/a><\/div>\n<p class=\"ob-desc\">C&rsquo;est un vin blanc, juste d\u00e9licieux ! Il est fin, bien balanc\u00e9, plut\u00f4t acidul\u00e9 et tr\u00e8s fruit\u00e9. Il a \u00e9t\u00e9 parfait sur le poisson, les fromages de ch\u00e8vres, la fourme (mon p\u00e9ch\u00e9 mignon) et les desserts aux fruits.<\/p>\n<\/div>\n<div class=\"ob-section ob-section-text\">\n<div class=\"ob-text\">\n<p>Merci \u00e0 ma Claire d&#039;avoir partag\u00e9 ce <strong>moment gastronomique et ensoleill\u00e9<\/strong> avec moi ! Bon, ok, cela fait 5 ans que je te l&#039;avais promis&#8230; (Et merci pour les photo!)<\/p>\n<\/p><\/div>\n<\/div>\n<div class=\"ob-section ob-section-text\">\n<div class=\"ob-text\">\n<p><em>Neversland<\/em><\/p>\n<p><em>First time I was in <strong>Nevers (Burgundy)<\/strong>, people awared me from urban mythes : closet in the garden, electricity squeezed from 8PM, cows, cows and cows, more than people&#8230; And that in Nevers, there is no so much things to do except drinking !<\/em><\/p>\n<p><em>Finally, it was not so borring thanks to flora, and Nevers&#039;s fauna. It is as incredible as what a Neversois (people from Nevers) could say : sea tortles, amazing roads (<strong>Nevers-Magny-Cours&#039;s circuit<\/strong>, Morvan montains&#8230;) invaded by 400 little rabbits (or 20 rows of 20 or 800 heards), ocean&#039;s monster rejected by the deadly Loire river, huge 120 kg rabbits which jump like does or rats who jump higher than 1m80&#8230; So much surprises in Nevers while I was only taking my Laguiole knife and a Maglight !<\/em><\/p>\n<p><em>One of the best and that always delights me is a dinner at <strong>Marie-H\u00e9l\u00e8ne and Jean-Michel Couron<\/strong>. I was appealed to their restaurant, Michelin starry : simple and so attractive menu, cheeses and local wines. It was 8 years ago, but I still remembering that shiitakes mushrooms salad (&quot;It seems that mushrooms grow in a chinese farm&#039;s cellar ! A friend of mine used to bring them every day their meals, in the dark and humid underground&#8230;&quot;). And that double trolleys full of goat cheeses. And that magic little boxe of pan masala at the end of the meal !<\/em><\/p>\n<p><em>In short, welcome to <strong><a href=\"http:\/\/www.jm-couron.com\">JM Couron, the little starry restaurant of Nevers<\/strong><\/a>.<\/em><\/p>\n<p><em>Among the various appetizers offered, there is a peas cream: simple but effective, I love it !<\/em><\/p>\n<p><em>First course : <strong>Claire have a Bar jelly ratatouille with crayfish, squid ink and basil condiment<\/strong>. And I, <strong>Slats tandoori guinea-fowl, roll shiitake mushrooms and roasted hazelnuts, hazelnut paste<\/strong> (yes, neversois shiitake !).<\/em><\/p>\n<p><em>Then, we choose the <strong>Hake  grilled on the skin with coconut milk sauce and peppers<\/strong>.<\/em><\/p>\n<p><em>And for dessert, hard dilemma: thyme\/peach vs verbena\/apricot. So, we took the two: <strong>The thyme shortbread and peaches with Espelette pepper, caramel buttered green tea flavoured<\/strong>  and <strong>Ona buckwheat creisp, white cheese foam with verbena, organic roasted apricots brown sugar and lemon verbena granita<\/em><\/strong><\/p>\n<p><em>And what would a good meal without a Burgundian nectar worthy of the name? I let my wines doctor choose. But to how she is in a trance in front of the card, I give my opinion \ud83d\ude09 We try an unknown AOC: the <strong>Auxey-Duresse<\/strong>, the small communal AOC village of the same name, located in the C\u00f4te de Beaune.<\/em><\/p>\n<p><em>It is a white wine, just delicious! It is fine, well balanced, rather tart and fruity. He was perfect on fish, goat cheese, Fourme (my guilty pleasure) and fruit desserts.<\/em><\/p>\n<p><em>Thanks to my Claire for sharing with me this <strong>sunny gourmet moment<\/strong>!
