Les po\u00ealer bien \u00e0 plat, avec la carapace, avec juste un fond de graisse de canard et sans sel. Avec des ciseaux, d\u00e9couper les anneaux et lib\u00e9rer la chair en ne laissant que le bout de la queue.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Je doute de l\u2019ordre des manipulations. Mais j\u2019avais tellement peur que les queues se recroquevillent lors de la cuisson que j\u2019ai pr\u00e9f\u00e9r\u00e9 garder l\u2019\u00e9paisse carapace.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Po\u00ealer 4 \u00e9pais morceaux de foie gras de 2 cm sur 5 cm. Poser sur un petit lit de roquette avec les langoustines.<\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\">Emulsionner le zeste d\u2019un citron, du vinaigre balsamique, des framboises, des feuilles de basilique et un filet d\u2019huile. Saler et assaisonner d\u2019un m\u00e9lange de 5 baies. Saut\u00e9 flat, with the carapace, with just a bit of duck fat and salt free. With scissors, cut the rings and release the flesh, leaving only the tip of the tail.<\/em><\/p>\n<p dir=\"ltr\" style=\"text-align: justify;\"><em>I doubt the order handling. But I was so afraid that the tails curl when cooking, I preferred to keep the thick carapace.<\/em><\/p>\n<p style=\"text-align: justify;\"><em>Fry 4 thick pieces of foie gras 2 cm by 5 cm. Place on a small bed of arugula with langoustines.<\/em><br \/>\n<em>Emulsify a lemon zest, balsamic vinegar, raspberries, basil leaves and a drizzle of oil. Salt and season with a mix of 5 berries.
